A Japanese-type sweet potato with deep purple skin and creamy white flesh. Subtly sweet and a little nutty, with a creamy, custardy inside. Give it the low and slow Yaki Imo treatment and it gets even more custardy and caramelized. Once you try it, you get it.

How is it different from orange?

Purple skin, creamy white flesh and a creamy, custardy texture that’s subtly sweet and a little nutty. Orange goes soft and moist with a classic, rich sweetness.

Best way to cook it?

Low and slow, Yaki Imo style. Wrap it whole in foil and bake at 325°F for 70–90 minutes, until it's soft all the way through. Don't rush it.

Is it organic?

Murasaki comes in conventional and organic. Orange sweets are conventional.

Where is it grown?

Murasaki is a Japanese-type variety. Ours are grown in the U.S.

How do I store them?

Cool, dark and dry. Skip the fridge. Cold turns sweet potatoes hard in the middle.
