Murasaki is a Japanese sweet potato with deep purple skin and creamy white flesh. It's subtly sweet, a little nutty, and has a rich, dense texture that gets tender when cooked. A different kind of sweet potato, and one worth getting to know.

Orange is the classic: rich sweetness with a soft, moist texture. Murasaki brings something different, with creamy white flesh, a subtle nuttiness, and a denser, more velvety bite. Both sweet. Two very different experiences.

How do you cook a Murasaki sweet potato?

Low and slow is the move. For a Yaki Imo-inspired bake, wrap the sweet potato in foil and cook at 325°F for about 70–90 minutes, depending on size, until tender all the way through. Give it time to develop that natural sweetness.
